The use of wine fingerprints and biochemical markers in the development of a wine quality control technology

  • Description: The objective of the project is to develop a unique technological process and a support system which enables the optimization of viticultural and oenological practices for the purposes of producing high-quality wine and also providing an objective measurement opportunity for the identification of wine fraud and wine-related problems. On the one hand, the process helps with selecting the most adequate date of harvest with the laboratory analysis of components from sample grapes under industrial conditions. On the other hand, this technology which can be used extensively in the agricultural industry creates the “fingerprint of the wine” with the analysis of the wine products and the determination of the ratio of main aroma components and other biochemical components. By creating the fingerprint of the wine, we can gain an objective insight into the ingredients uses, the characteristics of the terroir, the technologies used in wine production, the parameters of the environment and the mistakes made..
